Caution: Thanks to its composition carbon steel offers greater sharpness, easier sharpening, however it requires greater care than stainless steel. Keep your carbon steel blade clean and dry. For extended periods of storage, we recommend to use oil for conservation (eg. Camellia oil). Over time, blade may develop patina, but that is inherent property of steel and is not a material fault.  

About manufacturer:
Traditional Japanese manufacturer YOSHIDA HAMONO is located in Taku-city (Saga prefecture) since 1964. Small factory with 40 employees specializes in hand forging of kitchen knives. Their top range products are made from extremely hard ZDP-189 steel from Japanese Hitachi Metals steelworks.
