SHUN knife blades are made of 32 layers of Damascus stainless steel. Core is made of VG-MAX steel. This steel is highly resistant to corrosion and also has high hardness of 61 ± 1HRC (1.0% carbon, 1.5% cobalt). Thanks to its hardness the knife will retain the edge practically indefinitely.
