ZANMAI Modern III Black is a practical series for everyday cooking that combines a minimalist look, durable construction and easy maintenance. The blade is made of Japanese molybdenum-vanadium steel AUS-8A hardened to an optimal 58±1 HRC. This stainless steel material offers a balanced ratio between toughness, sharpness and easy resharpening, making it well suited for regular work in both home and professional kitchens. The precisely ground edge allows the knife to be guided smoothly and with good control, without the blade requiring the care typical of carbon steel. Hand washing and immediate drying still helps to protect the blade and handle in the long term. The blade shank continues the entire length of the handle. The full-tang construction increases mechanical strength, supports balance and gives a stable feeling when cutting. The black handle made of durable laminated wood has a restrained appearance, is pleasant to hold and naturally follows the simple lines of the blade. The dark surface underlines the professional character of the knife and fits easily into both modern and classic kitchens. Modern III Black is suitable for users who are not looking for decorative damascus, but want a reliable Japanese knife with a universal material, solid construction and timeless appearance.

The ZANMAI Classic III Damascus Black is based on the proven combination of a Damascus steel blade and an elegant black wooden handle. The blade consists of 33 layers of steel, i.e. 32 outer layers surrounding a core of Japanese VG-10 stainless steel with a hardness of 61±1 HRC. The surface creates a fine pattern reminiscent of wood structure, while the hard core provides a precise edge and long durability between sharpenings. The stainless steel design makes daily care easier, but we still recommend washing and drying the knife by hand after use, as it should be when maintaining any quality knife. The ergonomic profile, together with the full-tang construction, in which the blade shank passes through the entire handle, contributes to the knife's sure guidance, balance and mechanical resistance. The dark handle creates a timeless contrast with the damascus pattern and gives the knife a professional, understated look.

ZANMAI Classic III Damascus Corian is a striking combination of a traditionally looking Damascus pattern and a pure white handle. The blade has a 33-layer construction: a cutting core made of Japanese VG-10 stainless steel hardened to a hardness of 61±1 HRC is surrounded by 32 layers that create a fine, organic pattern on the surface. The hard core allows for a very precise edge with good durability, while the stainless steel design is practical for everyday kitchen use. The knife is nevertheless intended for hand washing and should be dried immediately after use. The main distinguishing feature of the Corian series is the light-colored handle made of a composite material also used as an artificial stone for kitchen countertops. Corian does not absorb liquids or common dirt, is easy to maintain and retains its neat appearance for a long time. The full-tang construction guides the blade shank through the entire handle, which supports strength, stability and balanced control. The white handle looks clean and modern and allows the Damascus pattern to stand out without other distinctive elements.

The ZANMAI Classic Pro III Flame develops one of the manufacturer's most distinctive and popular lines. Its 33-layer blade hides a cutting core made of Japanese VG-10 stainless steel, which is surrounded by layers creating a vibrant Damascus pattern. The result is a complex, irregular pattern that makes each knife unique and easily distinguishable from other kitchen knives. The hard core of the blade allows for a fine, precise edge with good durability, while the stainless steel construction facilitates routine maintenance. To maintain the quality of the blade and the surface of the knife, we recommend washing it by hand and then drying it. The handle is ergonomically shaped, so it fits perfectly in the palm of your hand and supports a secure grip during prolonged work. A characteristic detail remains the decorative mosaic rivet in the middle of the handle, which is often used to decorate luxury musical instruments. The end of the handle with the engraved ZANMAI logo can be used for crushing garlic, etc.

ZANMAI Supreme III Hammered combines luxurious workmanship with a construction designed for real kitchen work. The blade is made of 33 layers of Damascus steel with a cutting core made of Japanese VG-10 stainless steel with a hardness of 61±1 HRC. The manufacturer uses the classic Japanese tsuchime motif on its surface, i.e. a hammered structure that is reminiscent of manual knife techniques and gives each piece a lively character. The blade surfaces are polished to a high, almost mirror shine; the hammered relief and fine Damascus pattern create a striking contrast. The hard VG-10 core allows you to sharpen a precise edge with good durability, and the stainless steel design makes everyday care easier. The traditional octagonal handle has a new ergonomic profile and fits perfectly in every hand. The decorative mosaic rivet, New Silver alloy guard and red laminated Pakka wood underline the ZANMAI signature.

SUPREME series is a flagship of MCUSTA ZANMAI. RIPPLE design takes us back several hundred years back to Edo era in Japanese culture. Waves, or ripples, in blade represent a typical image of ocean and coast characteristic for this time period. Material used is a 33 layer Damascus steel with core made from Japanese VG-10 steel (C-1%, Cr-15%, Mo-1%, V-0.2%, Co-1,5%) and is hardened to 61±1HRC toughness. As is customary with all ZANMAI knives, edge has a convex shape of Hamaguri. The blade is finished with a stylish nickel silver guard. This material excels in antibacterial and anticorrosion properties. Interesting and very practical 8 sided handle is made from red laminated Pakka wood. Exceptionality of the knife is underlined by rivets that are used for making musical instruments. Exclusively in our store we pack all SUPREME series knives in wooden gift box, rather than paper boxes that come with the knives as standard.

During manufacture, ZANMAI REVOLUTION employs both modern and traditional methods. Revolutionary ten sided handle made from black laminated Pakka wood with special decorative rivet otherwise used for manufacture of musical instruments assures perfect balance of the knife. The handle was designed in such way that it looks like an ancient Japanese sword. On the other hand latest manufacturing methods were used for blade, which is constructed from three layers of powder steel SPG2 hardened to 61±1HRC. This method allows the material to have higher density as opposed to traditional manufacturing processes. Blade is finished with nickel silver alloy guard. This material is well known for its antibacterial and anticorrosion properties.

The ZANMAI Ultimate III Aranami represents the pinnacle of the manufacturer's standard offering and focuses on exceptional material and detailed finishing. The blade is made of coreless VG-10/VG-2 Damascus steel with a hardness of 61 ± 1 HRC. Unlike the usual sandwich construction, there is no separate cutting core wrapped in softer layers; the layered material runs through the entire blade and creates a distinctive pattern all the way to the edge. Marusho Industry's own forging technology forms a motif on the surface reminiscent of a stormy sea, after which the series is named Aranami. The pattern is more pronounced than in standard Damascus and each piece acquires an individual appearance. The premium character continues in the handle design. The octagonal profile of red laminated Pakka wood is bordered on both sides by polished elements of New Silver alloy. The guard and end heel create a clean contrast with the warm shade of the wood. Mosaic elements are set not only in the handle, but also in the heel, so the knife is sophisticated from all angles. The Ultimate III Aranami is designed for users looking for a top-notch kitchen tool with a collector's-grade finish. The Japanese precision is also emphasized by the packaging, with each piece being placed in a wooden gift box with a hand-tied bow.
